Boiled: Bring 4 1/4 pints of very salted water to a boil. Boil with 6 sprigs of thyme and 4 bay leaves for 10 minutes. Wash the shrimp, put into the boiling water and, without waiting for the water to boil again, allow for 5 minutes to cook. Remove from the heat, wait for 2 minutes before draining the shrimp. Serve almost hot, warm or cold. Fried: Wash the shrimp, place them onto a cloth to drain as much as possible. Heat 2 cups of oil in a high-sided frying pan, do not allow to smoke (the oil must be hot but not burning). Put in the shrimp, fry for 4 to 5 minutes according to size. Take out with a skimmer, put onto paper towel, lightly sprinkle with salt. Serve hot.
